I love overnight oats on a busy morning and I love everything pumpkin, especially in fall. So this recipe is perfect for my autumnal cravings! It’s also perfect to make with left over pumpkin puree (just make sure to set some aside for this).
Ingredients for one jar:
- 4 tbsp oatmeal
- 1 tbsp flax seed
- 1/2 tbsp chia
- 150 ml almond milk
- 1 tsp Pumpkin Spice
- 4 tbsp pumpkin puree (This is how I make mine)
- 1/4 apple, cubed
- 4 walnuts, chopped
- 1/2 tbsp. pumpkin seeds
- Put the oatmeal, flax seeds and chia in a closeable jar. Add the milk and stir it well, so everything is properly mixed. Close the jar and put it in the fridge for at least 3 hours.
- Put the pumpkin puree on top of the oat mixture and finish it off with the rest of the toppings.
