Recipe: Butter egg sandwich


When I still lived at my parents place, my dad used to make me ‘butter egg’ for breakfast whenever I was a bit hungover. He used way more salt and butter then I used for this recipe, but I needed to make it a bit more healthy for me to really enjoy it. It’s still very good though and often when I’m craving something savory for lunch, I make this.

What you need:

  • 1 spelt bun
  • 2 medium sized eggs
  • a handfull of lettuce
  • 1 radish
  • 20 grams of butter
  • Sea salt
  • Black pepper
  • Curry powder

Instructions:

  1. Boil 2 eggs for 7 minutes.
  2. Slice the bun in two and put some lettuce on both sides.
  3. When the eggs are boiled, peel them as hot as possible and put them in a bowl with the butter. Smash the eggs with the butter and add some salt, pepper and curry powder to taste. The butter will melt with the eggs, which makes it so tasty!
  4. Finish it with thin slices of radish and your lunch is ready!
