Actually I love to start Christmas with a huge brunch with lots of pastries, sugary breads and lots of butter, but since I’m not able to eat large portions because of my pregnancy, I decided to come up with a lighter and healthier breakfast. It’s also made very quickly and it looks really festive!
Ingredients for 1 bowl:
- 4 tbsp. oatmeal
- 1 tbsp. coconut grater
- 1 tbsp. flax seeds
- 1 tsp. cinnamon
- (Frozen) cranberries
- 1/2 tbsp. crushed pistachios
- mint leafs
- 150 ml unsweetened almondmilk
- Put the oatmeal, coconut grater, flax seeds, cinnamon and almond milk into a little pot and put it on low fire, keep stirring it until it’s warm. Add some more almond milk if you think the porridge is to thick.
- When the porridge is warm, pour it into a bowl and decorate it with the cranberries, pistachios and mint leafs. I added some extra coconut grater to make it look like it snowed!
