Vegan ‘chicken’ and tzatziki wraps

Since eating more and more vegan, I like to experiment with veganizing some of our favorites. That’s why I decided to make these wraps. They’re super tasty, perfect for easy Sunday evening dinners, but also very nourishing.

What you need for 2 servings:

  • 6 Whole wheat tortillas
  • 1 can of chickpeas, drained
  • 1 package of Vegan fake chicken pieces
  • 6 hands of lettuce
  • fresh dill
  • 150 grams coconut yogurt
  • 1/6 cucumber
  • 2 garlic cloves, minced
  • paprika powder
  • turmeric powder
  • curry powder
  • black pepper
  • olive oil

Directions

  1. Pre-heat the oven to 200 degrees Celsius. Use half a tablespoon of olive oil to cover the chickpeas and add the spices to taste (I like to use a lot), bake in the oven for 20 minutes (stir everything after 10 minutes)
  2. Cut the fake chicken pieces a bit smaller and put them in a skillet with some olive oil and the spices to taste. Heat it up until it’s warm and covered in spices.
  3. Mix the coconut yogurt with grated cucumber and minced garlic, spread out evenly on the tortillas.
  4. Put the baked chicken and chickpeas on top and add the lettuce and dill.
  5. Roll it up and enjoy!
