Cauliflower soup

Sometimes all you need is a warm bowl of soup, like this cauliflower soup. It’s super healthy and easy to make, so I had to share the recipe!

  • 2-3 tbsp butter
  • 1 yellow onion
  • 6 cups chicken broth
  • 1 cauliflower head (cut into florets, about 6 cups)
  • 1 cup Parmesan
  • 1 tbsp truffle oil
  • 1 spring onion
  • Salt and pepper
  • Old bread
  • Olive oil


  1. Heat the butter in a large pot. Slice the yellow onion thinly and cook over low heat for about 10 minutes, stirring occasionally.
  2. When the onions are golden brown, add the broth and cauliflower. Simmer for about 10 minutes.
  3. Cut the old bread into cubes and put them in a skillet with some olive oil until they’re golden brown, put it on a paper kitchen towel and set aside.
  4. Cut the spring onion into thin slices.
  5. Blend until you reach your desired consistency.
  6. Add the cheese and truffle oil and stir until the cheese is melted.
  7. Scoop the soup into bowls and top it with croutons, spring onion rings and salt and pepper to taste.
