Recipe: Breakfast Burrito

Almost 4 years ago I went on a 5 week vacation to the United States of America, where I stayed with family in California. My cousin lives in San Diego and they eat lots of burritos there, even breakfast burritos! I sure wasn’t complaining, because they were delicious. I ate the best burritos in San Diego. Because I miss my family in the states, I made my own version of a breakfast burrito and while I ate it, I dreamed about another trip to California!

What you need for 1 burrito:

  • 1 whole wheat tortilla
  • A hand full of spinach leaves
  • 1/4 avocado
  • 1 egg
  • 3 cherry tomatoes
  • Sprouts
  • 1/2 tbsp coconut oil
  • Black pepper

Let’s get started:

  1. Heat up the coconut oil in a frying pan and scramble your egg, add a little bit of pepper.
  2. Lay your tortilla on a plate and cover the center with spinach leaves (as seen above) add the cubed avocado, the scrambled eggs and the sprouts.
  3. Roll it up and enjoy! It’s that easy 🙂
